Acai
Berry Juice: How is it Being Produced?
Acai berry is
rich in nutrient and is best consumed while it
is still fresh, i.e. within few hours from the
time it has been harvested. If left out for a
longer periods, it will start losing its
nutritional value. Since acai palms are
cultivated deep in the Amazon, it is impossible
for the fruits to be delivered and sold freshly
outside there. Therefore, fresh acai berries are
always processed into acai products before they
are delivered out to world market, one of them

good quality product, the processing of acai
berries will starts within 24 hours after the
fruits are picked.
Acai berry juice
is processed from the pulp of the acai berry and
the extraction of the juice is possible with the
help of a crushing machines. Before the
extraction, the acai berry pulp which lies
between a hard skin and the seed, has to be
detached from its seed first. This is done by
first soaking the fruits for about 30 minutes in
mid hot water. Then, the fruits are crushed
using a wooded piece or a glass bottle in a
basket with a little water added. This step will
mash the skin of the fruit and loosen the pulp.
Then, a little more water is used to wash the
pulp and the mixture is filtered to separate
pulp from the unwanted parts. The extracted
juice is usually packed freshly and exported
without preservatives added. This difficult task
is done by hands of the natives Brazilian to
earn living.
Now, there are
manufacturers of acai products who use various
modern processes to process the fresh acai
berries. Acai juice is obtained through a
process called clarification. In this
clarification process, the cleaned extracted
pulp will go through an enzymatic treatment and
a clarified acai juice is produced. This
clarified acai juice is sometimes gone through
another water reduction process and a
concentrated acai juice is obtained.
Besides
clarification process, fresh acai berries are
sometimes processed through freeze drying
procedure or freezing procedure. Freeze dried
acai berries are transported out and later
processed into other acai products. In the
freezing procedure, the extracted acai pulp is
pasteurized and frozen into acai puree. Both
processes will help in preserving the nutritional
composition.
